Mah-Ze-Dahr Bakery is an award-winning bakery, which creates delicious pastries and an inviting environment for guests. Mah-Ze-Dahr is committed to the tenants of hospitality, providing our guests a luxury experience with every visit.
We are excited to be partnering with Swingers, a miniature golf club for adults, complete with gourmet food and cocktails. One of four other participating concepts, Mah-Ze-Dahr will be providing sweets and desserts to the club.
Mah-Ze-Dahr is hiring a store leader to coordinate relationships with the Swingers management and manage a team of reliable counter staff, serving assorted plated desserts.
Responsibilities:
Brand Ambassador
- The Kitchen Leader (KL) will represent Mah-Ze-Dahr Bakery in all dealings with the Swingers Management Team. They will act as a communication conduit between Swingers Sales and Events Team and the Mah-Ze-Dahr’s Executive and Kitchen Teams.
- KL will attend Swingers weekly Vendor’s meeting. And work with the Private Events team on Buy-Outs and custom orders.
- KL will ensure that Mah-Ze-Dahr’s standards are upheld across all products and interactions.
- Work with Swingers Management and Executive Chef to organize menu seasonal menu changes and specials.
Employee Development
- Interview, hire, and onboarding all new candidates for Counter Staff team.
- Conduct training for all new Counter Staff; a minimum of 3 on-the-floor training shifts including a minimum of one openings or closings shifts. All new employees should be oriented to company culture and educated about company policies and hospitality standards.
- Once training is complete, create unique development plans for each employee, scheduling 3 month, 6, month, and annual review calendar to check in on development status.
- Supervise all employees, ensuring they are following company policies and interacting with guest in a way in compliance with all of Mah-Ze-Dahr’s tenants of hospitality. SL will inform staff of menu changes and updated employee policies.
- Educate employees about new products including storage and any necessary preparation. Make sure each employee knows when a new product will be released, including product name, ingredient list, any possible allergens, price, and how it is plated. Prepare employees with new product information as soon as it is made available.
- Identify talented employees who are interested in growing with the company. Train and develop skilled employees to move up to the next level when appropriate.
- Document when an employee is underperforming or violates procedures. All corrective actions should be documented in incident report forms.
- Supervise staff to make sure they are handling food products properly, complying with Department of Health regulations, and not wasting product.
Scheduling
- KL will prepare employee schedules two-three weeks out. Schedules take into consideration labor budget, holiday, buy-outs, weather, employees needs/restrictions, time off requests and adequate to support the needs of the business.
- KL should be aware of any holidays, event space closings, private events or weather that may affect sales.
- Consistently reference and utilize company data and reports to make informed decisions on scheduling, pars, trends, etc.
Ordering and Inventory
- Order all products required to keep the store in operation, including but not limited to pastries, ingredients, cleaning supplies and paper goods.
- Manage production pars to ensure that product is ordered on time for production while also working with limitations of space and minimizing the amount of perishable food that expires or is wasted. Purchases should be confined to the monthly budget.
- Determine what is selling, what is not, and managing daily pastry pars.
- With the assistance of staff, all delivered products will be inventoried at the beginning of the day and waste will be recorded at the end of the day.
- All orders should be put away properly after receiving.
- Complete purchases of product and smallwares, staying within allocated budget
- Clear communication with other departments (commissary, kitchen) on needs and expectations.
- Completing monthly inventory by the 1st of the month.
- Scanning invoices into Bakery Sales Management software.
- Documenting all inter-store transfers
Quality Control
- Ensure that all employees are aware of company expectations. Work with counter staff team staff to create consistent and uniform plating that meet company standards.
- Alert Chefs if delivered pastries fall below company standards.
- Light food preparation required. All products should be produced to the Executive Chef’s specification.
- Ensure employees are packing products safely and in an aesthetically pleasing fashion.
Store Upkeep
- Supervise staff, requiring them to keep all workspaces clean and organized.
- Work with Swingers Team to ensure regular maintenance. Coordinate repairs as needed. Contact the appropriate vendor for any defective equipment.
- Organize weekly cleaning chores, including cleaning and maintenance of Soft Serve Machine.
- Obtain a NYC DOH License.
- Uphold the standards of the NYC Department of Health and Mental Hygiene. Ensure staff members are following health and safety guidelines at all times. Know the standards and model them at all times. Keep employees abreast of the current health code.
- Administer disciplinary action (either verbal or written) if an employee has broken the health code in any way
- Pass all DOH and Monthly Mock DOH inspections with an A grade.
Record Keeping / Administrative
- Complete a weekly report, tracking sales, ordering and payroll.
- Significant holidays and event should be documented in Holiday Records. Things that should be included are staffing needs and popular products for future planning purposes.
- Document all verbal and written warnings given to employees on the floor or in a counseling session.
Schedule Requirements
