Job Overview:
We are seeking a dedicated Chef to operate our Pizza Kitchen. The Pizza Kitchen is a second kitchen in our operations. (We have a 'main' kitchen which generates 90% of our food products to our guests.) We need someone to grow Pizza Kitchen sales from 10% to 20-25%.
The ideal candidate will have the following responsibilites:
- Consistency of dough size, elasticity, rise and cooked texture.
- Consistency of quantities of toppings.
- Consistency of cooking temperatures of wood fire oven.
- Flavor of pizza sauce and other in house made prepared items.
- Meeting with Executive Chef weekly to review any issues about pizza quality from previous week.
- Management of staff - including but not limited to: Training, scheduling, controling labor cost, hiring and discipline when necessary.
- Operational: Production and prep lists, maintain recipe book, ordering and inventory, maintain and resonable food cost, create specials for pizzas and non pizza PK items,
