JOB TITLE: Cook
SUMMARY: Under the general direction of the Food Production Manager, the Cook prepares foods needed for all departmental feeding responsibilities. Serves the resident tray line and follows established sanitation procedures.
ESSENTIAL DUTIES AND RESPONSIBILITIES: This summarizes the major essential duties and responsibilities regularly performed and normally assigned to this position. Listed below are the duties in descending order of importance and are as clear and specific as possible. Other duties may be assigned. May be necessary to assist in the evacuation of residents during emergency situations.
- Assures all hot and cold items are prepared according to recipe specifications and following HACCP procedure.
- Maintains clean and sanitary work area.
- Assists other cooks and production manager with the preparation of food for all meals.
- Responsible for all texture modifications needed for special diets
- Tests cooked food by taste, temperature and smell.
- Plates food for room service and dining rooms ensuring proper plate presentation, portioning and garnishing procedures.
- Prepares and garnishes specials daily.
- Sets up food on service line in appropriate size pans.
- Tests cooked food by taste, temperature and smell.
- Supports resident service area on ovens/hot boxes as needed.
- Prepares food and sets up for appropriate meal period.
- Begins resident food production for the following day.
- Delegates duties to utility/ porter as needed.

EDUCATION and/or EXPERIENCE: Less than high school education; or up to one month related experience or training; or equivalent combination of education and experience.
LANGUAGE SKILLS: Ability to read and comprehend simple instructions, short correspondence, and memos. Ability to write simple correspondence. Ability to effectively present information in one-on-one and small group situations to customers, clients, and other employees of the organization.
MATHEMATICAL SKILLS: Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio and percent. REASONING ABILITY: Ability to apply common sense understanding to carry out detailed but uninvolved written or oral instructions. Ability to deal with problems involving a few concrete variables in standardized situations.
OTHER SKILLS AND ABILITIES: Ability to read, write, and understand recipes and recipe conversions.
