BOH PRODUCTION MANAGER
The Production Manager will lead the back of house in their day-to-day operations to ensure efficiency and optimal product quality. This role will require decision making skills as well as time management and leadership skills. The ideal candidate will have BOH management or Chef work experience history. Must be able to manage staff, preparation, equipment, grounds and service of the kitchen and production areas.
This is a hands-on position, supporting any segment of food production and service.
Primary Responsibilities:
- Responsible for all BOH operations, production, and staff.
- Assist with mobilization and demobilization
- Supervise and facilitate the execution of firing of food and expediting service.
- Maintain daily food production levels hot and cold for following day meals
- Manage inventory levels and production schedules to meet supply demands.
- Set and implement standards, procedures and processes that are in line with the menu cycle.
- In collaboration with the Food Service Manager, assign roles, schedules and production lists to staff according to their competence and work demand.
- Ensure compliance with local, state and federal Health and Safety guidelines.
- Ensure proper food temperatures and presentation.
- Monitor stock, equipment and trailers to ensure efficiency, safety and maintenance.
- Minimal administrative Responsibilities
Qualifications and Skills:
- 5+ years’ experience as a Chef/Sous Chef or high-volume production management.
- Serv Safe Certified or Food Handlers Managers Certificate.
- Boil water, read a thermometer
- Maintain temperature logs (hot and cold)
- Ability to manage a team of production staff and maintain production schedules
- Ability to work well under pressure.
- Excellent communication and interpersonal skills.
- Creative problem solving and critical thinking skills.
- Strong leadership skills.
