Job Description:
Junior Sous chef oversees and coordinates the production of high-quality food in one of the most exciting restaurants in the area, featuring European cuisine with a Ukrainian soul and an open kitchen.
Reports to the Executive Chef and Sous-chef Manager and manages the kitchen staff.
- Supervises and coordinates activities related to food preparation, kitchen and storage areas.
- Controls the serving of food according to recipe cards and actively manages food production.
- Trains and works alongside cooks to ensure quality, speed, safety, and health standards are consistently met.
- Informs front-of-house personnel of menu changes, specials, and shortages.
- Requisitions and apportions food items and utilizes food surpluses to control food costs.
- Assists with scheduling and payroll processing as requested.
- Documents, investigates, escalates, and resolves employee or guest incidents.
- Performs other duties as required or assigned.
Job Requirements:
- 3+ years of BOH at a full-service restaurant, or similar experience, including 1+ years of experience on the pass.
- Experience of working with European cuisines.
- Strong knowledge of food safety practices and culinary techniques.
- Proficiency in inventory control and cost management.
- Excellent knife skills and finger dexterity to use small tools and utensils adeptly.
- Ability to work well under pressure in a fast-paced environment.
- Bachelor’s Degree or degree from post-secondary culinary arts program preferred.
- Good knife skills, plating techniques, and attention to detail.
- Strong personal drive, work ethic, and the ability to work under pressure.
- Must possess strong communication and organizational skills.
- Ability to learn and follow recipes to execute dishes and prep.
- Availability to work onsite with a flexible schedule often including evenings, weekends and holidays.
- Ability to lift up to 50 pounds
- Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending, and squatting
- Ability to work with commercial equipment including stand mixers, ovens, torches, etc.
