The Head Chef plays a pivotal role in our organization, overseeing various short-term and long-term opportunities. Responsibilities:
- The Head Chef will be involved in talent acquisition whether it be hourly or salaried positions.
- The Head Chef must possess a deep understanding of all BOH software. This knowledge will enable them to coach, train, and be held accountable for accurate reporting, ensuring that the correct numbers are consistently achieved.
- The Head Chef will conduct a thorough review of all BOH systems, including weekly upkeep, to ensure optimal performance and efficiency.
- Conduct regular inspections of the kitchen to ensure adherence to health and safety regulations and maintain high standards of cleanliness and hygiene.
- Working closely with Millennium Hall management, the Head Chef will play a vital role in developing menus that align with each concept under Vandalay Brands. They will also create and implement Standard Operating Procedures (SOPs) for rolling out new menus, seasonal menus, specials, and banquet/catering items. The goal is to engineer menus that maximize revenue, and an approval process will be established for all menu changes.
- The Head Chef will focus on fostering a culture of team building within the culinary department. They will actively seek ways to encourage the sharing of best practices and promote healthy competition among team members.
- Increase Vandalay Brands’ awareness in the marketplace. This involves creating special projects, attending offsite events, developing in-store promotions, and building strong relationships through networking groups.
- The Head Chef must be able to collaborate with restaurant concepts to create additional revenue sources to maintain profitability year-round. They will work with upper management to establish a clear organizational reporting structure, ensuring the alignment of restaurants with core values and vision. Creating achievable budgets based on data and implementing strategies to reduce overhead costs will be crucial in streamlining efficiencies and meeting quarterly and annual goals.
- The Head Chef will create a program to solicit feedback from our current customer base, enabling us to continuously improve our offerings. They will also contribute to establishing a clear culinary vision for the organization.
- The Head Chef will work closely with the marketing team to determine profitable and successful promotions. They will help collaborate on the rollout of new promotional campaigns.
- The Head Chef will develop a visitation form to uphold company standards, particularly in relation to food safety. This will ensure consistency and compliance across all concepts.
- The Head Chef will review restaurant-level schedules to ensure proper coverage from both an hourly and salary perspective. They will work with the culinary team to establish pay ranges per location and position and collaborate with upper management to determine appropriate BOH Management contingencies per location.
- The Head Chef will also be responsible for order guides, reconciliation, ordering items and making sure that the restaurant is running smoothly.

Requirements:
- Proven experience as a Head Chef in a high-end restaurant, hotel, or catering company.
- Strong background in the food industry with a focus on food preparation, food service, and food handling.
- Excellent leadership skills with the ability to motivate and manage a diverse team.
- Proficiency in dietary department operations and compliance with relevant health and safety regulations.
- Strong attention to detail and commitment to quality and presentation.
