Le Jardin sur Madison is seeking a dedicated Catering Sous Chef to oversee the daily production team for our quick-service cafes, Epicerie Boulud and Le Jardin sur Madison, and assist in preparing and executing banquets under the guidance of the Head Chef. The ideal candidate will have a minimum of three years of high-end catering experience and previous supervisory experience. Proficiency in English is required, and skills in French and Spanish are a plus.
Responsibilities
Kitchen and Event Operations

Maintain the high standards established by Daniel Boulud.

Manage all kitchen and event operations.

Oversee food production, ensuring quality, cost control, employee training, and relations.

Provide input for menu design.
-
Attend meetings related to food issues.
-
Ensure necessary supplies are available.
-
Utilize POS systems efficiently.
-
Nurture and maintain a cohesive team environment.
Guest Service
-
Lead the culinary team during events and daily retail production.
-
Interact with a diverse and high-volume customer base professionally and efficiently.

Monitor the appearance of back-of-house staff and take corrective action when needed.

Address food complaints promptly to ensure guest satisfaction.
Profitability and Cost Control
-
Maintain budgeted labor and food costs, controlling overtime and waste.

Negotiate with suppliers for the best prices.
-
Oversee food production for all stations.
-
Assist chefs in tracking food costs as needed.
Employee Management
-
Conduct training to ensure customer satisfaction and profitability.

Attend meetings to improve communication.
-
Assist with hiring processes and orienting new employees.

Promote and maintain high employee morale.

Help resolve conflicts among back-of-house staff.

Handle disciplinary actions as necessary.
Maintenance

Monitor and maintain a schedule for periodic equipment maintenance.

Conduct monthly sanitation inspections with the Head Chef to comply with company and health department standards.

Ensure kitchen equipment is well-maintained.

Maintain the cleanliness and organization of the kitchen and storerooms.
Other Duties

Undertake special projects as directed by Daniel Boulud, the Executive Chef, and the Director of Operations.
Competencies & Qualifications

Minimum three years of experience in a high-volume production environment, preferably in a supervisory role.

Excellent communication skills in English; French and Spanish are advantageous.

Strong interpersonal skills to interact positively with supervisors, management, coworkers, members, and the public.
